Diet Friendly Crock Pot Santa Fe Chicken

     Last night I tried a new recipe from skinnytaste.com called “Santa Fe Chicken”.  I love that it is made in a slow cooker, with little prep work. I threw all of the ingredients in the pot before work in the morning and had dinner waiting when the family got home in the evening.  

     Admittedly, as is often the case with me, I made a few adjustments to suit my own palate but the recipe is a great base. I added the juice of a lime, upped most of the spices to almost double the recommended amount, and added some regular chili powder, all for no additional calories or Weight Watcher’s Points. The lime juice does contain 4 grams of carbs, however. If you decide to try this dish, cook as directed but be ready to adjust your spices according to your personal taste.

      We served our Santa Fe Chicken on Whole Wheat Tortillas for an additional 70 calories or 2 Weight Watcher’s Plus Point and added 1/4 of shredded cheese per 1/2 serving. I  cut serving sizes in half because that was plenty to make a good-sized wrap and I served with a soup for a filling meal.  The wraps with 1/2 serving of chicken, 1 flour tortilla, and 1/4 cup mexican shreds were only 250 calories and 6 Weight Watcher’s Plus Points.
