Easter Dinner Menu For Those On A Low Carb or Low Calorie Diet

    

     Even though I won’t be making an entire “Easter Dinner” on Sunday, I thought this was the perfect time to create a figure friendly menu for spring entertaining. I have used Eating Well’s website to gather some delicious recipes that fall into both their low calorie and low carb catagories.  You can enjoy one serving size of each delicious spring dish and only use 538 calories, 41 Carbs (only 22 Carbs if you skip dessert), and 25 grams of fat. Tuscan Pork Loin

Per 3-ounce serving: 221 calories; 11 g fat ( 3 g sat , 6 g mono ); 69 mg cholesterol; 1 g carbohydrates; 0 g added sugars; 24 g protein; 0 g fiber; 156 mg sodium; 368 mg potassium.

Dill-Havardi Mashed Cauliflower

Per serving: 135 calories; 9 g fat ( 6 g sat , 2 g mono ); 29 mg cholesterol; 8 g carbohydrates; 0 g added sugars; 7 g protein; 3 g fiber; 287 mg sodium; 460 mg potassium.

 

Sauteed Green Beans With Cherry Tomatoes 

Per serving: 71 calories; 3 g fat ( 0 g sat , 2 g mono ); 0 mg cholesterol; 11 g carbohydrates; 0 g added sugars; 3 g protein; 5 g fiber; 157 mg sodium; 379 mg potassium.

EatingWell Deviled Eggs

Pink Grapefruit-Tarragon Sorbet

Per serving: 77 calories; 0 g fat ( 0 g sat , 0 g mono ); 0 mg cholesterol; 19 g carbohydrates; 9 g added sugars; 1 g protein; 0 g fiber; 2 mg sodium; 195 mg potassium. I omit the vodka which should save aout 32 calories making it around 45 calories.
